Foodie Friday - Banana Ice-Cream (without the cream!)

For a guilt-free summer snack to satisfy your sweet-tooth, try this super easy banana "ice-cream" recipe.

Preparation: 5 mins
Freezing time: 1-2 hours
Yield: 2 scoops

Ingredients

2 ripe bananas
1 tsp vanilla essence
customise as you like - cocoa powder, peanut butter, nuts, etc.

Directions

1. Peel the bananas and cut them into 1/2 cm-thick slices.

2. Spread the banana slices onto a plate (or baking tray if making large quantities) lined with a baking sheet. Make sure that the slices don't overlap, or they will clump.


3. Place the plate in the freezer for 1-2 hours, until the slices are frozen solid.

4. Blend the frozen banana slices. You will have to open the blender a few times to scrape the sides. Keep blending until you get a creamy consistency. My mixer made a lot of noise at the beginning, but quietened down as the texture got smoother.


5. Mix in the vanilla essence and any other flavouring ingredients you like.

6. Serve directly (soft-serve texture) or re-freeze to harden (ice-cream texture).
